Situated on the Roussillon plain, this vineyard is cradled by the Tramontane wind all year round. The soil is clay-limestone, stony with a marl subsoil.
Grape varieties - Vinification
Vines selected for their limited yield (45 hl/ha). The grapes, picked at optimum ripeness, undergo a rigorous selection process. Harvested at the end of August, the grapes are destemmed. Skin maceration for 12 hours at low temperature. Gentle pressing. Settling and fermentation at 18°C.
Grenache blanc & Vermentino
Alcohol Titre : 12.8% Alc/Vol
Aging
Aged on fine lees. Bottled within 6 months of harvest. Kept in an air-conditioned cellar at 14°C.
Tasting
A wine with very light reflections, with flattering aromas of small white fruits brought out by the freshness of the vermentino. The Grenache brings more to the palate, with a fine consistency and a wine that is fresh despite being fully mature.
Service & Development prospects
Served chilled at a temperature of 10°C, it goes well with white-fleshed fish and Mediterranean cuisine. This wine remains fresh and expressive for the first two years after harvesting, after which it develops more candied aromas.
