Situated on the Roussillon plain, this vineyard is cradled by the Tramontane wind all year round. The soil is clay-limestone, stony with a marl subsoil.
Grape varieties - Vinification
Vines selected for their limited yield (45 hl/ha), harvested at full maturity. The grapes, picked at optimum ripeness, undergo a rigorous selection process. Harvest at the beginning of September.
Traditional de-stemmed vinification - 3 weeks maceration.
The cellars, equipped with the latest refrigeration and pressing technology, allow for meticulous winemaking.
Aging
The wines are matured for 10 months in vats in cellars air-conditioned to 16°C.
Tasting
This wine, with its deep colour and violet highlights, combines a fine tannic structure with an aromatic profile of greedy red berries.
Service & Development prospects
Served chilled at 16-18°C, it goes well with a wide variety of dishes. Its aromas of redcurrants and raspberries will remain for the first 2 years, after which it will develop notes of undergrowth and should be drunk within 5 years.
